The chicken stew recipe is very rusty, hearty and a bowl of delicious food. It’s full of protein, healthy carbs and veggies and kids go crazy for this tasty and healthy comfort food.

The ingredients you’ll need for the healthy chicken stew recipe is chicken, onions, potatoes, and carrots. For proper cooking, you just need to spend some time as the recipe needs to simmer for 30 minutes altogether. But if you use Dutch oven, this will decrease your time. Actually, all the recipe is made in one pot using simple regular ingredients you use in your kitchen.

To enjoy your meal, all you’ll be needed some crusty bread to dip into all those juices to enjoy the rusty and delicious taste of it!

And if you are worried about can this chicken stew be frozen? Yes, of course, and if you are planning to freeze it, I personally suggest you use flour as a thickener as this will have a better consistency. Also, freezing in individual servings will help you to defrost it and you
will be able to take out as many as you need to serve.
 
Ingredients:
2 tbsp olive oil
2 tbsp. butter
2 stalks celery, cut into pieces
2 carrots, peeled and sliced into pieces
1 small onion (chopped)
Salt and freshly ground black pepper
1/2 cup fresh basil leaves, torn into pieces
1 or 2 chopped tomatoes
1 14-ounce low-salt chicken broth
1 tablespoon tomato paste
1 bay leaf
1/2 teaspoon dried thyme leaves
2 chicken breasts (about 1 1/2 pounds total) with ribs 1 organic kidney beans, drained
Freshly chopped parsley (for garnish)

Directions:
Brown chicken in 1 tablespoon olive oil using a large pot or Dutch oven even it does not need to be cooked through.

Before you add the celery, carrot, and onion, heat the oil in heavy 5 ½ quart saucepan over medium heat. About 5 minutes, saute the veggies until the onion translucent. To taste, season with salt and pepper. Stir the tomatoes with their juices, basil, tomato paste, thyme, bay leaf, and chicken broth. Before you press to submerge, add the chicken breasts.
 
Take your cooking liquid to a simmer. Decrease the heat to medium-low and simmer gradually uncovered until the chicken is cooked through, turning the chicken breasts over and occasionally, stir the food maximum and this will take about 25 minutes. Transfer the chicken breasts to a work surface while you use the tongs, and cool for 5 minutes. Now discard the bay leaf. Add the kidney beans and simmer about 10 minutes until the liquid decreased into a stew consistency!
 
First of all, discard the chicken’s skin and bones from the chicken breasts before you cut or shred the chicken into bite-size pieces. Now, return the meat to the stew. Before you season with salt and pepper to taste, bring the stew just to a simmer.
 
(Almost done) ladle the stew into serving bowls before you serve the recipe to taste with the bread. For more deliciousness, you can serve crusty bread.
 
Suggestion: Addition to this recipe, sweet potato is a great addition as this helps thicken it and do soften quite a bit actually.
 
These are almost everything you’ll be needed to make your healthy chicken stew recipe in your regular kitchen. This recipe will save your time and memory and your health will be benefitted as it is full of protein, healthy carbs and vegetables.
