South Indian cuisine is not as popular across the globe save for a few items like idlis (a type of steamed rice dumpling) and dosa (a type of pancake). Yet, there is a treasure trove of vegan recipes hidden and not known outside of the region or country. Indian cuisine in general and South Indian cuisine in particular is rich in vegetarian and vegan recipes. A subtropical climate with abundant rains and rich soil ensures availability of most vegetables throughout the year.

This particular recipe is eaten with rice or can be consumed as a soup and involves minimum preparation and oil. Rasam in Tamil language is loosely translated as pepper water and is a light gravy without vegetables prepared largely with tamarind. Other variations use lentils and tomato and involve cooking. This one is prepared with minimal use of the stove (only for seasoning). Because of the ease with which this could be prepared, this was popular amongst travelers who undertook long journeys in the days when modern transport was not available.

Ingredients
For main preparation
• Tamarind – Two key-lime sized balls
• 2 tsp.black pepper
• 2tsp.cumin seeds
• 4 cups of water
• 2 green chillies
• 6 cloves of garlic
• 1 tsp. of Salt

For Seasoning
• 1/2tsp. mustard seeds
• One pinch of asafetida
• 1 curry leaf sprig
• 2 tsp.sesame oil
• Coriander leaves
